Greek Artichoke Salad
Ive been trying to find increasingly veggie based meals to eat that dont take much time or prep work. And this Greek artichoke salad is just right! I loveee artichokes and I will chop them up and put them on salads or just soak them in some Greek or Italian dressing and snack on them whenever I unshut the fridge. I definitely dont get into the cooking of the artichokes. I just cant be bothered with that time consuming part when I like the canned just fine. But do whatever you prefer!
I dont do much meal prepping, but I think this recipe would be a lunch option to meal prep. Just alimony the dressing on the side! Greek Artichoke Salad
Ingredients
- 2 cans quartered artichoke hearts, tuckered and patted dry
- 1 can chickpeas, tuckered and rinsed
- 1 english cucumber, sliced
- 1/4 red onion, chopped
- cherry tomatoes, halved
- feta
- basil, chopped
- greek dressing
Instructions
- Strain and chop ingredients as necessary.
- Mix all ingredients.
- Toss in dressing surpassing serving.
