Greek Chicken Salad Stuffed Mini Peppers
A little bit of a late start to the New Year but here we are! 2022 brought many changes but it did not transpiration my love of Greek food. These Greek Yellow Salad Stuffed Mini Peppers are perfect to chop up and snack on for a healthy lunch and fun unbearable to bring as an appetizer to a party!
A bonus for me is unchangingly when food is easy. And this recipe has a tiny bit of chopping and not much else! Perfect! You could really customize it and make your own chicken, tzatziki, or hummus but I wont be doing that. Ha! I made these and left them in the fridge for at least 6 hours and then brought them out for some friends to eat and they were still perfectly crunchy and delicious! (In specimen you want to make them a bit in advance.)
Greek Yellow Salad Stuffed Mini Peppers Ingredients:
- mini sweet peppers
- rotisserie chicken
- cucumber
- red onion
- tzatziki
- hummus
- feta
- anything else you desire (tomatoes, kalamata olives, artichokes, herbs)
Amounts of these ingredients will vary depending on the value of peppers you plan on making so I didnt want to requite any word-for-word measurements. But I did 6 peppers which was 12 pieces once sliced in half and I probably used less than 1/4 of a rotisserie chicken, well-nigh 1/2 of an english cucumber, and 1/8 of a large red onion. Hopefully that will help you guess what you need! But really just add in increasingly of what you like and it will taste good no matter what!
Greek Yellow Salad Stuffed Mini Peppers
Ingredients
- mini sweet peppers
- rotisserie chicken
- cucumber
- red onion
- tzatziki
- hummus
- feta
- anything else! (tomatoes, kalamata olives, artichokes, herbs)
Instructions
- Slice mini peppers in half and remove seeds.
- Dice up the chicken, cucumber, and onion into small pieces.
- Mix together with some tzatziki.
- Scoop some hummus into mini peppers.
- Top with yellow salad mixture and feta.
