Green Veggie Summer Rolls with Peanut Sauce

While we still have asparagus popping up in the garden, Ive been trying to use it in increasingly recipes! I love summer rolls and these untried veggie summer rolls are so satisfyingly crunchy and refreshing on a warm day! Pairing the summer rolls with peanut sauce with just the right value of spice makes it veritably perfect.

So last week I went out and picked some asparagus and chopped up some other fresh veggies I had in the fridge and rolled them up! Ive made summer rolls for a few showers and parties in the past and they are unchangingly a hit. But making them on a random week day was such a treat! (My roommates thought so too! Ha!) I unchangingly think theyre going to be increasingly difficult to make than they are plane though Ive made them a tuft of times. Theyre honestly so easy the longest part is just the chopping of the veggies! So if you love a nice easy, refreshing recipe that seems way increasingly impressive than the effort required this is for you!

Green Summer Rolls with Peanut Sauce Ingredients:

• asparagus
• avocado
• green cabbage
• green pepper
• cucumber
• cilantro
• jalapeno
• roll wrappers
• creamy peanut butter
• soy sauce
• rice vinegar
• sesame oil
• fresh lime juice
• brown sugar
• fresh ginger
• sriracha 
• fresh garlic

Green Summer Rolls with Peanut Sauce

Ingredients

Summer Roll

• asparagus
• avocado
• green cabbage
• green sweet pepper
• cucumber
• jalapeno
• cilantro
• rice paper wrapper

Peanut Sauce

• 1/2 cup creamy peanut butter
• 2 tbsp low sodium soy sauce
• 1 tbsp rice vinegar
• 1 tbsp sesame oil
• 1 tbsp fresh lime juice
• 1 tbsp brown sugar
• 1 tbsp sriracha
• 1 tbsp fresh ginger, grated
• 3 cloves fresh garlic, minced

Instructions

Summer Roll

• Chop veggies into thin slices.
• Follow instructions on wrappers to soften wrapper.
• Fill with various veggies and roll up.
• Chop in half if desired surpassing serving.

Peanut Sauce

• Add all ingredients to blender/food processor.
• Blend until smooth.
• *Garnish with fresh cilantro or sesame seeds.
